In the GranCollina cellar, we work to combine the innovation of modern wine-making techniques with the Cotto family wine tradition.
Wine Experience (18,00 euro) : tour of the Cellar with wine tasting and aperitivo. The tour is around 50 minutes and after it there will be an aperitivo with a mix of salami in the restaurant.

Vineyard terrain: Commune of San Damiano d’Asti – Asti –Piedmont –Italy
Grapes used:100% Grignolino
Wine-making: big wooden casks for a short period, then in plastic reinforced by incorporated fibreglass casks
Colour: ruby red, rosé, light
Perfume: wine of moderate olfactory intensity and complexity, with fruity and wine notes, which reminds grapes, plums, cherries and notes of roses
Taste: dry, but also quite soft, of intense freshness, tasty and with lively tannins. Good start and balance, with prevalence of tartness and bitterness thank to its strong tannins and pleasant finish
Alcoholic content: 13%
Combination: versatile wine, to try cool as an aperitif or at room temperature with simple dishes, cold meats and salami and middle maturing cheese, hors-d’œuvres and soups

Scent:intense, with good complexity and elegance, frank olfactory bouquet, floral with violet notes and fruity with raspberry and blackberry notes
Taste: Bold tannic, with a sweet aftertaste of almonds
Alcoholic content: 13.5%
Combinations: it fits well with warm hors-d’œuvres, soups, stuffed pasta such as agnolotti and cappelletti, but also with delicate meats

Colour: ruby red, with purple hues
Scent: intense and quite fruity
Taste: fresh, fragrant, with a lively and satisfying flavour. Soft, harmonious and velvety, with a typical bitterish aftertaste, mainly characterised by fruity notes of cherries and plums
Alcoholic content: 13%
Combinations: simple dishes, salamis and cheeses. Ideal with simple first courses, red meat or slightly seasoned meat
Service: to be served at 18°C

Scent: slightly herbaceous with raspberry notes
Taste: slightly mixed, with a pleasant inkling of raspberries. The closing is unexpectedly fresh and frank.

Combinations: versatile wine, to be combined well with simple dishes, cold meat and salami, average matured cheeses, hors-d’œuvres, but also first courses and white meat
Service: it can be served at 10°-12° C or at room temperature at 18°-20° C

Terre Alfieri Nebbiolo D.O.C.G.

Colour: dark red with orange hues
Scent: intense, with good complexity and elegance, frank olfactory bouquet, floral with violet scent, fruity with blackberry and raspberry notes and spicy with black pepper notes
Taste: dry, warm, soft, with a clear sensation of velvety vinous flavour and roundness, provided also by the fairly good presence of tannins. Virile wine
Alcoholic content: 14%
Combinations: game, braised meats, roasts, hard average matured cheeses and all the international cooking dishes. It fits well with particular dishes, both light and complex, thanks to its being complex and round at the same time
Service: to be served at 18°C, we recommend to uncork the bottle at least 15 minutes before tasting

Barbera d’Asti D.O.C.G.

Grapes used:100% Barbera
Wine-making: big wooden casks, then in plastic reinforced by incorporated fibreglass casks
Colour: intense ruby red, with fairly good purple hues, tending to become dark red with ageing
Scent: intense wine flavour, heady, ethereal, with dominant fruity characteristics of cherries, liquorice, plums, violets and blackberry
Taste: tannic, full-bodied, dry, astringent and persistent, with a well balanced tartness
Alcoholic content: 13.5%
Combinations:a wine of great versatility, which can be combined with roasts, red meats in general (for example carpaccio, that is to say thinly sliced meat), game and average matured cheeses. This wine combines well also with complex first courses such as risotti, polenta (boiled cornmeal) and bagna cauda (typical sauce of garlic, anchovy and oil served with vegetables)

Combinations: perfect to be served as an aperitif, with simple fish dishes and to be perfectly combined with cold meats and salami, hors-d’œuvres and light first courses

Colour: light straw-coloured yellow, with very light greenish hues
Scent: ample olfactory range with floral notes of with peach flowers and fruity notes of apples, bananas,pineapple and almonds
Taste: fresh and lively taste, with a typical slightly bitterish closure
Alcoholic content: 12.5%
Combinations: greatly versatile wine, excellent with white meat, fish, soft cheeses, light and fresh hors-d’œuvres. Excellent also as an aperitif
Service: to be served at around 10° C as table wine or at around 6° – 8°C as an aperitif

Scent: rich of floral and fruity inklings, particularly of green apple
Taste: pleasantly fresh, thanks to the well-balanced tartness. Fresh, dry and fruity taste, with the green apple tartness.

Combinations: it can be well combined with white meats, fresh dishes, fish and salads. It can also be served with aperitifs and hors-d’œuvres.
Service: to be served at 10° C as table wine and at 6° – 8°C as an aperitif.

Combinations: it can be perfectly combined with all fish and white meat dishes. Excellent also as an aperitif

Wine-making: stainless steel casks
Colour: light red, nearly rosé
Scent: mainly a floral and fruity note, which reminds the spring and the fresh fruit
Taste: sweet, clean, fruity, aromatic but fresh. The sparkling wine-making makes it fresh and light, while keeping all the aromas.
Alcoholic content: 6.5%
Combinations: excellent to be served with desserts, biscuits and pastries
Service: to be served at around 6° – 8°C as an aperitif or dessert wine

Cà d’Tobia

Wine-making: stainless steel casks
Colour: straw-coloured yellow with pale greenish hues
Scent: mainly a floral note of white flowers which remind the spring, but also with a light, delicate fruity note of apple and pineapple.
Taste: tending to savoury, clean and dry. The sparkling wine-making makes it fresh and light, while keeping the complex structure.
Alcoholic content: 13%
Combinations: while excellent for aperitifs, it was intended at first as a dessert wine. If served in carafe, it can be perfectly combined with all fish and chicken meat dishes.
Service: to be served at around 6° – 8°C as an aperitif or dessert wine, or at 10°C as a table wine.
